Watch-outs

  • Cold-rolled steel surface needs consistent seasoning or it will rust
  • Assembly is lengthy and best done with a second person
  • Grease trough/cleaning tool doesn't fit well, making cleanup fiddly
  • Flat top only — no grill marks or low-and-slow smoke

Known niggles

  • Heat escapes from the sides during cooking, making the side shelves too hot to use for staging food
  • Temperature control knobs have noticeable play (roughly 1/8 turn) before they actually adjust heat
  • Wind can cause uneven cooking side-to-side on the griddle surface
